原材料や生産地、製法のみならず、容器や容量などの規定もないため、風味や品質、価格もさまざまなタイプの製品があるのが特徴です。
「伝統的バルサミコ酢 (DOP)」に相当する高品質なものもある一方、ワインビネガーに着色料や香料、カラメルなどの添加物を加えバルサミコ風にした大量生産品などもあり、玉石混淆といえます。
